Coconut Waffles with Fried Chicken – 炸鸡松饼

Truly all American food, waffles with fried chicken has been a hit all over the world! Seriously, pair these 2 favourites together and you got something that’s both sweet and savory. The addition of maple syrup when serving just make it even more yummy!

For people who want to avoid taking butter, we’ve replaced it with coconut oil in the waffle batter, the waffles are real easy to do – just follow the instructions on your waffle maker. We used Medella premium coconut oil for the deep frying, as we tend to realise that it’s good due to the constant temperature and high smoking point.

You’ll also need to ensure that you marinate the chicken overnight, or minimally 4 hours for the flavors to seep in. Make sure that you get your chicken wings to a golden brown deep fry to enjoy the best taste possible!

  1. Fried Chicken:

  2. 8 chicken wings

  3. 2 cups buttermilk

  4. 2 tbsp Worcestershire sauce

  5. 1 tsp salt

  6. 1½ cups plain flour

  7. ½ cup cornmeal

  8. 2 tbsp cornstarch

  9. 1 tbsp smoked paprika

  10. 2 tbsp onion powder

  11. 1 tbsp dried oregano

  12. 2 tbsp garlic powder

  13. 2 tbsp salt (adjust to preference)

  14. 1 tbsp black pepper

  15. Medella premium coconut oil for deep frying

  16. Waffles:

  17. 2 cups plain flour

  18. 4 tsp baking powder

  19. 3 tbsp sugar

  20. 2 eggs

  21. 1 tbsp vanilla extract

  22. ⅓ cup Medella premium coconut oil

  23. 1½ cups milk

  24. Topping:

  25. Maple Syrup


  1. Put 8 chicken wings in a ziplock bag

  2. Add 2 tbsp Worcestershire sauce, 1 tsp salt and 2 cups buttermilk

  3. Seal ziplock bag and let it marinate for 4 hours or overnight

  4. Sift 2 cup plain flour with 4 tsp baking powder into a mixing bowl

  5. Add 3 tbsp sugar

  6. Heat 1½ cups milk in a pot until warm

  7. In another bowl crack and mix 2 eggs, 1 tbsp vanilla extract

  8. and ⅓ cup Medella premium coconut oil

  9. Add warm milk to egg mixture and mixture.

  10. Slowly add in liquid mixture to flour and mix well

  11. Add batter to waffle maker and cover

  12. Once waffle is done, repeat until batter is used up

  13. In a bowl add 1½ cup plain flour, ½ cup cornmeal and 2 tbsp cornstarch

  14. 1 tbsp smoked paprika, 2 tbsp onion powder, 1 tbsp dried oregano and 2 tbsp garlic powder

  15. 2 tbsp salt (adjust to preference) and 1 tbsp black pepper

  16. Mix well and set aside

  17. Heat enough Medella premium coconut oil in a wok

  18. Coat marinated chicken wing with flour mixture and deep fry until golden brown

  19. Drain and set aside

  20. Add chicken wings to waffles and serve with maple syrup
