Sinigang gang where you at! 

When we first tried Sinigang, we understood why it was such a crowd favourite! The variety of soft veggies made the stew hearty, and healthy, plus it went perfectly with a steaming bowl of rice. 

It’s also a popular dish to serve for celebrations, which is why we made this recipe for Philippines Independence Day! We took a Singaporean little spin (and hack) on the dish by adding in some Sio Bak, but if you’re looking for a healthier option, Sinigang usually involves stewing pork belly instead.

In a pot over medium heat, add 2 tbsp cooking oil. Cut up Sio bak and add into pot, pan fry until lightly charred on both sides

Push pork pieces aside and add in garlic, onion, green chilies, and tomatoes.

Add water and chicken stock, season with fish sauce, white pepper powder and tamarind paste. Mix well
