Jon’s been obsessed with gumbo lately—maybe it’s the rich and complex flavours, the hearty and comforting vibes, or the fact that you can whip it up in one pot. For this Chicken Gumbo recipe, we’re gonna start by air frying some chicken thighs and saving that delicious rendered fat for the roux!
A roux is just oil (we’re using that chicken fat) and flour, starting light and slowly cooked until it darkens. Getting the roux right is crucial since it flavours and thickens the whole dish to perfection.
Once the roux is ready, toss in your veggies of choice, sausages, and chicken stock. Crank up the heat and bring it to a boil. Add your spices and chicken pieces, then set your Ninja SmartLid to pressure cook for about 30 minutes. When it’s done, serve with rice and a sprinkle of spring onion.
