Are you an emotional eater? If you’re anything like Jon, this one-pot Chicken Gumbo recipe is going to hit you right in the feels… ’cause it’s so damn good!

Jon’s been obsessed with gumbo lately—maybe it’s the rich and complex flavours, the hearty and comforting vibes, or the fact that you can whip it up in one pot. And of course, we’re using the Ninja 11-in-1 SmartLid Multi-Cooker. For this Chicken Gumbo recipe, we’re gonna start by air frying some chicken thighs and saving that delicious rendered fat for the roux!

A roux is just oil (we’re using that chicken fat) and flour, starting light and slowly cooked until it darkens. Getting the roux right is crucial since it flavours and thickens the whole dish to perfection.

Once the roux is ready, toss in your veggies of choice, sausages, and chicken stock. Crank up the heat and bring it to a boil. Add your spices and chicken pieces, then set your Ninja SmartLid to pressure cook for about 30 minutes. When it’s done, serve with rice and a sprinkle of spring onion.

In the Ninja Smart Lid, add in the rack and set up to air fry. Add chicken thighs lightly seasoned with salt, onto the rack and air fry at 200°C for about 10 minutes. Once chicken is crispy and lightly charred, set chicken aside.

Once butter is melted, gradually add plain flour, stirring constantly. Continue to cook and stir until a dark roux forms. This process will take some time.

Once dark roux forms, add in diced up onion, green bell pepper, celery, carrot, garlic, and mix constantly. Cook until vegetables are slightly soft.
