Black Garlic Chicken Soup
Most of us have heard largely about how black garlic, also known as “black gold” has great benefits for us. In this recipe we decided to do something nutritious – so we made a simple, healthy and delicious chicken soup with it!
The sweetness from the black garlic along with a whole chicken, dried scallops and chicken herbs gives the soup a nice savoury flavour and also warms your body and soul! This is a great soup recipe for the keeping, do give it a try!

1chicken (1kg) | |
10dried scallops | |
10clove black garlic | |
20g dried lily flowers | |
20g wolfberries | |
4red dates | |
15g chinese yams (huai shan) | |
25g codonopsis root (dang shen) | |
2liters water | |
Salt to taste |
Directions
1.
Soak dried scallop in boiling water for 15 minutes.
Mark as complete

Remove black garlic from bulb.
Mark as complete
3.
Cut chicken into smaller pieces.
Mark as complete
4.
Blanch chicken in a pot of boiling water for 2 minutes. Strain and transfer to clay soup pot.

5.
Add in all the dried herbs, black garlic, dried scallops with the soaking water, and 2 litres of water.
Mark as complete
6.
Bring to boil and add salt to taste.
Mark as complete
7.
Lower the heat and let it simmer for 2 hours.

8.
Serve hot when ready.
