In a pan over medium heat, add olive oil. Add Johnsonville Hot & Spicy and pan sear evenly on all sides until nicely browned. Remove and set aside.

Add in onion, garlic and saute until fragrant. Add in green apple and cook until slightly caramalised. Add cornstarch and mix evenly.

Add in canned tomatoes, fruit jam, thyme and mix well.

Add in beef stock, light soy sauce, Worcestershire sauce, mustard, meat curry powder, and cayenne pepper. Mix well.

Simmer on low for about 20-30 minutes.

Serve over a bed of mashed potatoes, garnish with fried shallots and coriander on top
