Ingredients:

  1. 800g pork ribs

  2. 4 dried Chinese mushrooms

  3. 1 bulb garlic

  4. 1 packet (35 grams) herbal Bak Kut Teh spice

  5. 1½ litres water

  6. 10g dried shrimp

  7. 6 dried chillies

  8. 1 medium onion

  9. 6 cloves garlic (peeled)

  10. 5 ladies’ fingers

  11. 1 tbsp oyster sauce

  12. 1 tsp sweet dark soya sauce

  13. ⅛ tsp ground white pepper

  14. 2 tbsp oil

Sauce:

  1. 1 tbsp sweet dark soya sauce

  2. 2 tsp light soya sauce

  3. ½ tsp sugar

  4. ½ tsp salt

Steps:

  1. Blanch 800g pork ribs in a pot of boiling water for 5 minutes. Drain and transfer to claypot.

  2. Add to claypot 4 dried mushrooms, 1 bulb garlic, bak kut herb bag and 1½ litres water.

  3. Bring to boil and simmer on low heat for 45 minutes uncovered.

  4. Add in sauce ingredients and continue to simmer until liquid is almost dried out. Set aside until needed.

  5. Wash 10g dried shrimp and chopped coarsely.

  6. Cut 5 ladies’ fingers diagonally into 0.5cm thick slices.

  7. Peel and cut onion into quarters and separate the layers.

  8. Cut 6 soften dried chillies into 5cm lengths.

  9. Heat 2 tbsp oil.

  10. Fry chopped dried shrimp until fragrant

  11. Add in dried chillies, onion and garlic and stir fry until fragrant.

  12. Add cooked pork ribs, 1 tbsp oyster sauce and 1 tsp sweet dark soya sauce.

  13. Add ladies’ fingers and stir fry until it’s cooked.
