[Air Fryer Series] BBQ Chicken Wings

Ingredients:

  1. 8 chicken wings (cleaned and pat dry)

  2. 5 calamansi (halved)

  3. 2 tbsp shallots (minced)

  4. 3 tbsp garlic (minced)

  5. 2 tbsp grated ginger

  6. 2 tbsp oyster sauce D

  7. 2 tsp fish sauce D

  8. 2 tbsp honey  D

  9. 1 tbsp light soy sauce D

  10. ½ tsp salt

  11. ½ tsp pepper

  12. 1 tbsp sesame oil

Chilli Dip:

  1. 6 red chillies

  2. 5 chilli padis

  3. 20g ginger

  4. 5 cloves garlic

  5. 1 tbsp rice vinegar

  6. Juice from 6 calamansi

  7. 3 tbsp sugar

  8. 1½ tsp salt

  9. 60ml chicken stock

Steps:

  1. Clean and pat dry chicken wings. Separate mid wings and drumettes.

  2. Whisk well minced shallots, minced garlic, grated ginger, oyster sauce, fish sauce, honey, light soya sauce, salt, pepper and sesame oil.

  3. Pour it over the chicken. Mix well. Let it marinate in the fridge for 1 hour or  overnight.

  4. Blend red chillies, chilli padis, ginger, garlic, rice vinegar, juice from 6 calamansi, sugar, salt and 50ml chicken stock.

  5. When you are ready to grill the chicken wings, leave it an hour to come to room temperature.

  6. Add wings into the air fryer and grill at 200°C.

  7. Grill for 5 minutes on each side until tender, skin is crisp and caramel brown.

  8. Serve with calamansi and chilli dip.
