Stir Fried Bitter Gourd With Salted Egg Yolk

Green, pod-shaped and covered in what seems like blisters all over its skin – this distinct looking vegetable-fruit definitely does not look pleasing to the eyes. Salted egg yolk is the answer – the simplest, most effective way to mask that sharp bitter taste.
The fusion of rich salty and sweet umami flavour goes well with almost everything, it’s no wonder this all-purpose orange yolk has been stirring up such a huge craze in Asia. Ingredients

500g bitter gourd
3salted egg yolks
15g garlic
1tbsp Shaoxing wine
¼tsp chicken stock granules
¼tsp sugar
¼tsp salt
tsp pepper
3tbsp oil

Directions

1.

Halve and deseed bittergourd.
Mark as complete

Slice bitter gourd to 3mm thickness.

Steam salted egg yolks for 5 minutes. Mash it coarsely.

Heat 1 tbsp oil to smoking point.
Mark as complete

Flash fry bittergourd for 1 minute.

Season with ¼ tsp chicken stock granules.

Glaze with 1 tbsp Shaoxing wine.

Dish out and set aside.

In a clean wok, heat up 2 tbsp oil on medium heat.

Saute garlic until fragrant.

Add in the 3 mashed salted egg yolks.

Stir fry until foam forms.

Add in the stir fried bitter gourd slices and stir fry for a minute.
