Stir Fried Bitter Gourd With Salted Egg Yolk

Green, pod-shaped and covered in what seems like blisters all over its skin – this distinct looking vegetable-fruit definitely does not look pleasing to the eyes. Like its name implies, bitter gourd has an acrid bitter flavour that may be difficult for many to appreciate. Salted egg yolk is the answer – the simplest, most effective way to mask that sharp bitter taste.
The fusion of rich salty and sweet umami flavour goes well with almost everything, it’s no wonder this all-purpose orange yolk has been stirring up such a huge craze in Asia. Simply throw in the slices of gourd into melted mashed yolk along with condiments and leave it up to those rich orange orbs to work its wonders, turning even the most unpleasant food into a scrumptious one for all to enjoy!

500g bitter gourd
3salted egg yolks
15g garlic
1tbsp Shaoxing wine
¼tsp chicken stock granules
¼tsp sugar
¼tsp salt
tsp pepper
3tbsp oil



Halve and deseed bittergourd.
Mark as complete

Slice bitter gourd to 3mm thickness.
Mark as complete

Steam salted egg yolks for 5 minutes. Mash it coarsely.

Heat 1 tbsp oil to smoking point.
Mark as complete

Flash fry bittergourd for 1 minute.
Mark as complete

Season with ¼ tsp chicken stock granules.
Mark as complete

Glaze with 1 tbsp Shaoxing wine.
Mark as complete

Dish out and set aside.

In a clean wok, heat up 2 tbsp oil on medium heat.

Saute garlic until fragrant.
Mark as complete

Add in the 3 mashed salted egg yolks.
Mark as complete

Stir fry until foam forms.

Add in the stir fried bitter gourd slices and stir fry for a minute.
Mark as complete

Season with ¼ tsp salt and ⅛ tsp pepper.

Serve immediately.
