Tau suan is a dessert soup made with split mung (green) beans. Mung beans is believed to aid the body in reducing heatiness (cooling), while this starchy and gooey concoction definitely warms your stomach as well.
Top this up with loads of youtiao (fried dough sticks) and let it soak in the soup for extra texture and aroma. It’s an old school comforting dessert that never fails to bring a smile since these days of childhood! For a more deep colour version use brown / red sugar instead of normal white sugar.
