After washing your cherry tomatoes, half them and set aside. Dice up your white onion, roughly chop your coriander and add them to your tomatoes. Drizzle generously with EVOO and season with salt and pepper to taste, and set them aside to get sexy. This is your pico de gallo.

Heat up a non-stick pan on medium-low heat. While that’s heating, beat 5 eggs in a mixing bowl. Add in some neutral oil (or butter if you’re in the mood) when your pan is hot, then pour your eggs in to scramble them. Once they’re glossy and goo-ey, transfer them out to a plate and set them aside.

Time to assemble - lay down a baking sheet, put your wrap on top and layer on your chicken, eggs, pico de gallo and layer on some shredded cheddar. Be careful not to overstuff your burrito!

So the pro-move is this: after reheating your burrito in a microwave for 1 min, place it on a medium-low heated non-stick pan. Scatter even more cheddar cheese around the burrito on the pan and let that melt away and crisp up on the bottom. What’s better than this c’mon.
