The night before, poke holes on the skin of pork knuckles and salt generously. Leave them on a drying rack and refrigerate overnight.

Set up air fryer and line the bottom of the rack with chopped carrot, onion and garlic.

Meanwhile we can make the beer gravy. In a saucepan over medium heat, add olive oil, and add carrot, onion and garlic. Saute until caramalised.

Deglaze with Beer and reduce until half. Add in chicken stock, bring to boil and add sugar and salt. Reduce until desired taste. Thicken with cornstarch solution if required.
