Gingko Barley

Ginkgo Barley also known as 白果薏米 is one of the popular desserts that we have grown up loving. Not only is it super easy, it’s also incredibly smooth and tasty.
It’s full of pandan goodness – adding the barley, beancurd skin, and ginko nuts.. Certainly yummy. Enjoy this light and refreshing beancurd treat, either hot or chilled depending on your preference.

Ingredients

Adjust Servings
3sheets soft beancurd skin
100g barley
2litres water
4pandan leaves (tied into a knot)
80g rock sugar (adjust to preference)
100g gingko nuts (shelled and seeds removed)
2egg whites

Directions

1.

Soak 3 sheets soft beancurd skin in water until soft
Mark as complete
2.

Wash and drain 100g barley then add to pot with 2 litres boiling water
Mark as complete
3.

Add 4 pandan leaves (tied into a knot) and 80g rock sugar (adjust to preference)
Mark as complete

Boil for 25-30 minutes until barley becomes soft, and remove pandan leaves
Mark as complete
5.

Tear soaked beancurd skin into small pieces and add to pot
Mark as complete
6.

Add 100g gingko nuts (shelled and seeds removed) and stir in 2 egg whites
Mark as complete
7.

Simmer for 15 minutes. Serve hot or chilled to preference
Mark as complete
