Sweet Potato Soup – 番薯姜糖水

Sweet potato soup evokes sweet childhood memories. It’s a traditional, easy and fast to whip up Chinese dessert. All you need is sweet potato, ginger, pandan leaves and black jaggery sugar. In 30 minutes, you will have a hot piping bowl of gingery sweet soup with soft sweet potatoes to tuck in. The soup will warm the body, especially during cold rainy days or when one is feeling a bit under the weather.

Add more or less ginger to your preference.There are many varieties and colours of sweet potatoes in the market. You can use as many colours you want, or just one colour. Add in some sago pearls or even ‘tang yuen’.

  1. 1kg sweet potatoes

  2. 2 liters water

  3. 80g old ginger, to taste (peeled and smashed)

  4. 6 pandan leaves (knotted)

  5. 80g black jaggery sugar

  6. 80g rock sugar


  1. Peel, cut and soak 1kg sweet potatoes.

  2. Bring water to a boil in a pot.

  3. Add in 80g ginger, pandan leaves, 80g black jaggery sugar and 80g rock sugar.

  4. Turn down heat. Simmer 10 minutes.

  5. Add in sweet potatoes

  6. Simmer 10 minutes, or till fork tender

  7. Dish out. Serve hot or cold.
