Pro tip: Claypots are great for even and thorough braising but a regular wok or sauté pan does the trick too.

In a claypot over medium heat, add 2 tbsp cooking oil, add roast pork and stir fry until lightly browned. Add in garlic and onion, stir fry until fragrant.

Add in halved Shiitake mushrooms, green bell pepper, red bell pepper, snow peas and stir fry for 30 seconds.

Deglaze with shaoxing wine and add chicken stock. Bring to boil and add oyster sauce, light soy sauce, white pepper, and sugar, and mix well. Reduce until sauce is slightly thick.
