Lao Gan Ma Aglio E Olio – 老干妈蒜油意粉

Pro-tip: got a almost-finished bottle of Lao Gan Ma or Tom Yum pasta or Miso? Add the ingredients accordingly and use some pasta water to “wash” all the leftover bits in the bottles – zero waste, 100% flavour.

  1. 2 tbsp Cooking oil

  2. 4 tbsp Lao Gan Ma

  3. 1 tbsp Hua tiao wine

  4. 4 cloves Garlic (sliced)

  5. 4 stalks Coriander (chopped)

  6. 170g Spaghetti

  7. Salt and pepper to taste


  1. In a pot of boiling water, cook 170g of Spaghetti according to pack instructions.

  2. In a pan over medium low heat, add in 2 tbsp of cooking oil, add in sliced garlic and good until lightly browned.

  3. Add in Lao Gan Ma chilli, hua tiao wine and mix well.

  4. Add in cooked pasta, and 1 small ladle of pasta water.

  5. Mix and coat sauce evenly.

  6. Season with salt and pepper, add chopped coriander, mix evenly and serve.
