Thai green curry, or Gaeng Keow Wan, is one of Thailand’s most iconic curries. While many people know it as a creamy coconut curry served with rice, the curry paste itself is incredibly versatile and can be used in many other dishes โ including fried rice.
The heart of this dish is the homemade Prik Gaeng Keow Wan (green curry paste), made by pounding together fresh herbs, green chillies and aromatic spices until fragrant. While it takes a little effort, the result is a paste that’s full of fresh flavour.
Instead of turning it into a traditional curry, we’re using it to make fried rice! As the curry paste fries in the pan, it releases all of its aromatics before being tossed together with chicken, vegetables, coconut milk and day-old rice.ย
Finish it with crispy fried basil, fresh cucumber and a squeeze of lime for a comforting Thai-inspired meal that’s perfect for lunch or dinner.
