Taiwan Beef Noodle Soup

2 beef shank | |
5 slices of ginger | |
2 ginger | |
3 scallions | |
1 bunch garlic | |
1 white onion | |
4 shallots | |
1/2 apple | |
1 tomato | |
2tbsp soy bean paste | |
2tbsp light soy sauce | |
2tbsp dark soy sauce | |
100ml rice wine | |
1piece rock sugar | |
1tbsp sesame oil | |
Bok choy | |
White wheat noodles | |
Cilantro | |
Spices
1 cinnamon stick | |
1tsp fennel seeds | |
1tsp sichuan peppercorn | |
1 star anise | |

Directions
1.
Blanch beef shank with ginger and water, bring to a boil

Scoop up scum and set beef aside, keep water

Thinly slice white part of scallions for dressing

Chop scallions into 3, thinly slice ginger, slice onions, chop garlic into half and chop open shallots

Cut apples and tomatoes into quarters

Put oil to cover base of stockpot, low heat

Add in ginger, onions, shallots, scallions and garlic

Add in soy bean paste

Saute and add in 100ml rice wine

Cook off the alcohol

Add in beef shanks, coat the beef and saute abit

Let stock simmer for 1-1.5 hours *Add more soy sauce according to preference

Blanch bok choy and saute with sesame oil

Cook white wheat noodles for 2 mins / till cooked

Add 1 tsp light soy sauce,1 tsp sesame oil and some white pepper in serving bowl
