Out with the regular brown butter chocolate chip cookies – these rare, bite-sized cornflake cookies are a buttery, melt-in-your-mouth treat with the crunch of toasted cornflakes and the tangy chew from raisins or dried cranberries.
This recipe is one of two bakes that my mother bakes up every Lunar New Year. It’s all hands on deck early in the morning: my mother would portion trays and trays worth of cookie dough, and my sister, helper and I are summoned to poke the tops of the dough with as many cornflakes as possible.
Our reward? Apart from the swipes of cornflakes as we decorate them – it’s one container of cookies, ‘cuz the rest are packed to give away to relatives and friends.
Still worth it though, 10/10 would recommend as a bonding activity, or if you just want a delicious treat.
