Closing in on CNY, we are thrilled to share this recipe for one of our favourite comfort foods โ€“ Braised Duck with Sea Cucumber!
If youโ€™re a fan of braised dishes, youโ€™ll love to try this one โ€“ the magic truly happens when you braise the sea cucumber in dark soy sauce and the duck, the combined flavour with the sauce makes it the ideal dish for repeat servings together with your bowl of white rice.

** Take note, adjust the amount of dark and light soy sauce seasoning based off amount of water used (depending on pot size), if you don't have such a big pot you, can use a small pot, turning the duck every 20 mins while braising. Thank God it's Friday, and do we have a TREAT to try over the weekend! The Chinese, especially Teochews and Hokkiens love to braise their food. A good braised duck is cooked with love in a pot of soy sauce based braising liquid with essential aromatics. We added chuan xiong (ligusticum) and dried mandarin peels on top of the usual cinnamon sticks, star anise and cloves.Using quality soy sauces also makes a big difference to the taste. Our favorite topping to go with braised duck are braised eggs and tau kwa. If time permits letting the braised duck rest for longer time before eating it lets the braised taste penetrate your dish better.
