Chocolate Snow Skin Mooncake
An alternative to making the traditional mooncakes, try making these Snow Skin Mooncakes. Because of its mochi like texture people love it, especially kids! It’s a perfect delicacy to serve as an afternoon snack or even dessert during the Mid Autumn festival. On the plus side, they are so easy to make! There’s no baking involved, you can make it and eat it straight or refrigerate and eat it within a few days.

200g fried glutinous rice flour | |
220g icing sugar | |
80g vegetable shortening | |
200g water | |
640g chocolate lotus paste |
Directions
1.
Sift fried glutinous rice flour and icing sugar and mix well.
Mark as complete

Rub vegetable shortening into the flour mixture.
Mark as complete

Add water to the flour mixture. Mix until the dough forms and knead slightly.
Mark as complete
4.
Flour work board and divide the dough into 80g portions. Roll into a ball and flatten dough into a flat circle.

5.
Divide chocolate lotus paste into 80g portions, roll into a ball.
Mark as complete
6.
Wrap chocolate lotus paste with thin snow skin, seal and roll into a ball.
Mark as complete
7.
Dust with flour and press firmly into mooncake mould. Press mooncake out of mould.
