Chicken Satay with Peanut Sauce 鸡肉沙爹和花生酱

Starting today, we will be featuring the recipe videos of the winning entries to our Tecno Local Oven Recipe contest over the coming week. Our first featured winner would be @ladyhomechef ( with her recipe for Chicken Satay with Peanut Sauce!!

Some interesting parts of this recipe is that chicken thighs were used, together with the fact that it’s an oven-grilled recipe makes this so assessable to many home cooks too. A honey mixture was then brushed on both sides during the oven grilling process, giving it a nice additional sweetness to the meat!

  1. 4 large skinless chicken thighs (cut into bite size)

  2. 20-24 Bamboo skewers

  3. Ingredients


    1. 10 shallots

    2. 6 cloves garlic

    3. Thumb size galangal

    4. 1 large lemongrass (white part)

    5. 2 tsp turmeric powder

    6. 1 tsp coriander powder

    7. 1 tsp fennel powder

    8. 1 tsp cumin powder

    9. 1 tbsp tamarind juice

    10. 2 tbsp sugar

    11. 2 tsp salt

    12. 2 tbsp oil

    13. Ingredients

      Peanut sauce:

      1. 1 tbsp oil

      2. 500 ml water

      3. 1 to 2 cups grounded peanuts

      4. 3 tbsp tamarind juice

      5. 6 tbsp palm sugar (adjust to taste)

      6. 1 tsp salt (adjust to taste)

      7. Ingredients

        Spice paste:

        1. 8 shallots

        2. 5 cloves garlic

        3. 3 tbsp chilli paste or 10 soaked dried chillies

        4. Thumb size galangal

        5. 1 large lemongrass (white part)

        6. 2 Tbsp toasted belacan

        7. Ingredients

          Brushing mixture:

          1. 3 tbsp oil

          2. 3 tbsp coconut milk

          3. 3 tbsp honey


          1. Blend / ground all the ingredients listed in the marinade together into a smooth paste. Add to chicken thigh pieces and Marinate in the fridge for at least 3 hours or overnight.

          2. Skewer marinated chicken onto the bamboo skewers (3-5 chunks per).

          3. Preheat oven at 200°C to 220°C on grill mode.

          4. Grill the satay in the oven for 6-8 minutes and then baste it with the oil mixture and honey, turn the satay and baste it again. Put it back to grill for 3-4 minutes. Repeat the basting process one more time and grill till its cooked.

          5. Serve with peanut satay sauce, sliced cucumbers and onions.

          6. To make peanut sauce, Blend / ground all the ingredients listed in the spiced paste into a smooth paste.

          7. Heat 1 tbsp of oil in a pan, add spice paste, stir fry till fragrant.

          8. Mix grounded peanuts and water, stir well and bring to boil. Season with salt, palm sugar and tamarind juice. Taste and adjust seasonings to your preference.

          9. Simmer for 2-3 minutes until sauce thickens. Set aside until ready to serve.
