Red Wine Oxtail Stew

A good and hearty treat for a rainy day, or whenever you feel like having an oxtail dish! This recipe is simple and easy enough for anyone to try on a weekend afternoon without much preperation needed. Adding the seared oxtails, the red wine glazed celery and carrots, and other ingredients, this is cooked in a pressure cooker until fork-tender, perfect for mash potatoes or rice!

Adjust Servings
1kg oxtails
2 carrots
2sticks celery
½ onion
2tbsp olive oil
½bottle red wine
1tbsp dried thyme
3bay leaves
2tbsp worcestershire sauce
1litre beef / chicken stock (or enough to cover oxtails)
Salt and black pepper to taste
Chopped spring onions



Roughly chop 2 carrots and 2 sticks of celery
Mark as complete

Cut half an onion into slices
Mark as complete

Heat 2 tbsp oil in pan, add 1kg oxtails and season with salt and black pepper to taste
Mark as complete

Sear oxtails on both sides, remove from pan and set aside
Mark as complete

Add to the same pan the chopped carrots, celery and onions
Mark as complete

Saute and season with salt and black pepper
Mark as complete

Deglaze the pan with half a bottle or red wine, and transfer the vegetables to the pressure cooker
Mark as complete

Add 1 tbsp dried thyme, 3 bay leaves and the seared oxtails
Mark as complete

Add 1 litre beef / chicken stock or enough to cover oxtails
Mark as complete

Season with salt to taste and add 2 tbsp worcestershire sauce
Mark as complete

Cover and cook in pressure cooker for 45 minutes
Mark as complete

Once done garnish with chopped spring onions and serve
Mark as complete
