Combine the stir fry sauce ingredients to a small bowl, whisk together and set aside.

Stir together oyster sauce, soy sauce, garlic, mixed herbs in a large bowl. Add sliced steak, and mix well until evenly coated in marinade. Cover, refrigerate and marinate at least 10 mins up to maximum 2 hours.

In the same wok over medium-high heat, Add sesame oil, stir fry together bell peppers, onion slices, carrot slices, ½ teaspoon salt, and ¼ teaspoon black pepper until slightly charred and softened, scraping any brown bits off the bottom. Approx 3-5mins.
