Beef Hor Fun – 牛肉河粉

Ingredients:

  1. 500g Beef flank slices

  2. 1 tbsp Light soy sauce 

  3. 1 Egg white

  4. Sugar to taste

  5. 1 tsp Baking soda

  6. 2 tbsp Shaoxing wine

  7. 2 tbsp Cornstarch solution

  8. 300g Hor fun

  9. 1 tbsp Light soy sauce

  10. 1 tbsp Dark soy sauce

  11. 150g Bean sprouts

  12. 150g Choy sum

Gravy for Hor fun:

  1. 3 cloves of garlic (minced)

  2. 25g Black bean

  3. 2 tbsp Oyster sauce

  4. 1 tbsp Light soy sauce

  5. 1 tbsp Dark soy sauce

  6. 2 tsp Fish sauce

  7. 600ml Chicken stock

  8. 3 tbsp Shaoxing wine

  9. 2 tbsp Cornstarch solution

  10. 1 Egg (beaten)

Steps:

  1. Marinate beef slices with soy sauce, egg white, sugar, baking soda, shaoxing wine & corn starch solution, and massage mixtures until well absorbed. Chill for 30 minutes.

  2. Pour in soy sauce & dark soy sauce onto the hor fun directly. Use your hand to mix well gently to prevent breakage and get ready to pan fry the hor fun.

  3. In a pan with some oil, pan fry the hor fun until charred, set aside. Toss a handful of bean sprouts, quick toss and set aside.

  4. In the same pan, quickly shallow fry the beef slices until half 70% cooked, dish up and set aside.

  5. In the pan, stir fry the garlic until fragrant, add in black beans and continue to stir fry until fragrant.

  6. Pour in the oyster sauce, black sauce, light sauce, fish sauce & chicken stock, stir to mix well.

  7. Add in choy sum & bean sprouts & continue to cook for a few seconds. Add in beef slices, pour in cornstarch solution to thicken gravy.

  8. Pour in Shaoxing wine and stir in beaten egg.

  9. Pour gravy over hor fun & serve hot!
