Pork Ribs King – 排骨王

Happy holidays guys, and do we have a new dish for you!

When a dish is called Pork Ribs KING (排骨王), it had better be good! In our case it was definitely worthy of that title. Also referred to as Kyoto Pork Ribs (京都排骨), this dish surprisingly has no direct relationship to Japanese culture. For our version here, we decided to use the cut of pork ribs instead of the usual pork chop that most recipes have used.

As with Coffee Ribs, we ended up with a flavour BOMB, which is porky and crispy on the outside, yet so juicy on the inside. What’s different this time is that the ketchup plum sauce and rice vinegar provided the much needed acidity to cut through the sweet tasting sauce. Get ready an extra bowl of rice to go with this!

  1. 700g pork ribs

  2. 1 tbsp sesame oil

  3. 2 tsp salt

  4. ½ tsp white pepper powder

  5. 1 tbsp ginger paste (ginger blended with water)

  6. 1 tbsp rice wine

  7. 1 tbsp oyster sauce

  8. ½ tsp bicarbonate of soda

  9. 1 egg (beaten)

  10. 2 tbsp custard powder

  11. 2 tbsp potato starch

  12. Oil for deep-frying

  13. Sauce

  14. 3 tbsp white sugar

  15. 3 tbsp brown sugar

  16. 2 tbsp rice vinegar

  17. 100ml water

  18. 2 tbsp tomato ketchup

  19. 1 tbsp plum sauce

  20. 1 tsp worcestershire sauce

  21. 1 tbsp HP sauce

  22. 1 tbsp A1 sauce

  23. Cornstarch solution - 1 tbsp cornstarch mixed with 2 tbsp water

  24. 1 tsp dark soy sauce

  25. Garnish

  26. 2 tbsp toasted white sesame seeds

  27. Fresh coriander


  1. Cut 700g pork ribs into individual ribs

  2. Tenderize pork ribs with meat hammer

  3. Add 1 tbsp sesame oil, 2 tsp salt, ½ tsp white pepper, 1 tbsp ginger paste, 1 tbsp rice wine, 1 tbsp oyster sauce and ½ tsp bicarbonate of soda

  4. Mix well and massage into pork ribs

  5. Add 1 beaten egg, 2 tbsp custard powder and 2 tbsp potato starch

  6. Mix well and set aside to marinate for 1 hour.

  7. For sauce, mix the following: 3 tbsp white sugar, 3 tbsp brown sugar, 2 tbsp rice vinegar, 100ml water, 2 tbsp tomato ketchup, 1 tbsp plum sauce, 1 tsp worcestershire sauce, 1 tbsp HP sauce, 1 tbsp A1 sauce, cornstarch solution and 1 tsp dark soy sauce.

  8. Mix well and set aside

  9. Heat enough oil in a wok, deep-fry pork ribs until golden brown

  10. Drain and set aside

  11. Pour sauce mixture into a pan, and cook until it thickens

  12. Add pork ribs and toss with sauce.

  13. Sprinkle 2 tbsp toasted toasted sesame seeds and garnish with fresh coriander
