This is most versatile, quick-to-make, impressively easy plain chow mein recipe. Made under 15 mins, it’s quicker than delivery and honestly, tastier, healthier and greener too.

Easily one for the keeps, this stir fried soy sauce noodles serve as the perfect base. Add in your favourite veggies and proteins. Swap egg noodles from a vegan friendly noodle base. Voila, it’s your very own stir fried noodles.

Ingredients

170g Dried noodles
100g Bean sprouts
3stalks Scallions (separate the white and green part, cut into 1½ inch long) 
½Onion (cut into strips)
tbsp Sesame oil
Seasoning:
tbsp Dark soy sauce
1tbsp Light soy sauce
1tbsp Oyster sauce
2tsp Sugar
2tbsp Cooking wine/ Shao Xing wine

Directions

1.

Blanch noodles with hot boiling water, drain and set aside.
Mark as complete

Combine the ingredients under seasoning and mix well. Set aside.
Mark as complete

With a little cooking oil, pan fry the onions and scallions white portion only, Drain and set aside.
Mark as complete

Add a little more oil and add in noodles and pan fry noodles until crispy and fragrant over low heat. Add a little more oil along the way to aid in frying to achieve crispiness of the noodles.

Add bean sprouts and scallion greens, toss evenly.
Mark as complete
6.

Add in pre-cook onions & scallions whites, give it a quick toss & mix well
Mark as complete
7.

Pour in sauce mixture and drizzle with sesame oil , continue to stir fry until well combined. Serve hot.
