An ingenious recipe create by Jun’s (@jun.and.tonic) mum refreshing twist on the classic Chinese ABC soup, infused with the natural sweetness of coconut water. 

Perfect for a cosy breakfast or light nourishing meal, this soup is easy to make, vegan, and gluten-free. Enjoy it on it’s own, poured over rice, soaked in noodles or even macaroni! 

Tip: 

  • Simmer the vegetables slowly to let their flavours meld together. 
  • You can swap vegetables based on what you have in your pantry, or even add beans and peas for extra protein.

In a deep pot, combine the water, half of the coconut water and salt. Bring this to a boil, then turn it down to a simmer.

Add the onions, carrots, and potatoes into the pot, and let it simmer on very low heat for 30 minutes.

Add in the tomatoes, and let it simmer for a further 20-30 minutes. The vegetables should all be close to falling apart at this point, which adds to that heart-warming, rustic texture of soup that we just love!
