5. Scallops with Mango Puree Canape


Canapés are an excellent appetizer for your friends and family during the Christmas holidays! This recipe is as easy as pie, starting by prepping pickled cucumbers, making a puree using honey mangos, and then searing scallops using butter (who doesn’t love butter and scallops?). In fact, scallops are a wonderful source of lean protein, containing 17g in a 3-ounce (6 scallops) serving


Use serving spoons as a vessel to hold the tasty treat for an IG-worthy presentation that tastes as good as it looks! 



  • 1 whole Japanese cucumber (seeds removed and diced)
  • 3 tbsp Apple cider vinegar
  • 3 whole Honey mangos (skin and seed removed)
  • 3 tbsp Unsalted butter
  • 250g Frozen boiled scallop meat
  • Salt and pepper to taste


  1. Remove seeds and dice Japanese cucumbers. Transfer to a bowl and add apple cider vinegar, mix well and set aside.
  2. Skin and deseed 3 mangoes and add into a food processor. Blend until smooth.
  3. In a pan over medium heat, add unsalted butter. Add in defrosted scallops, season with salt and pepper. Sear scallops until brown on both sides.
  4. In individual serving spoons, add mango puree, pickled cucumbers, seared scallops and garnish with a mint leaf.

6. Christmas Porchetta Recipe with Black Garlic Stuffing


This Christmas Porchetta is essentially a delicious, rolled-up sio bak with an Asian twist to the stuffing; filled with indulgent flavours from black garlic, chicken liver and herbs. This recipe is a great way to add protein to your holiday meal. Pork and chicken are both quality sources of protein, and chicken liver is jam-packed with valuable vitamins and minerals, and most importantly iron. The complex flavours — smokiness, earthiness, fragrance, and intense umami flavour — will blow your guests away.

We used OLDTOWN Coffee to create the sauce, and this simple step really makes this recipe unique for your Christmas feast. Once added, simply stir until the sauce thickens before adding the pork ribs. We added chilli padi to give it a bit of kick, adding to the flavour explosion that will leave guests wanting more!
