Ingredients

Adjust Servings
1 kg Pork belly
8 stalks Lemongrass (white parts, smashed)
Salt
Oil
Thai Dipping Sauce
3 Shallots (sliced)
4 cloves Garlic (sliced)
3-4 Chilli Padis
1 cup Thai Basil
1/2 cup Rice Vinegar
1/2 cup Fish sauce

Directions

1.

Poke holes on the skin of pork belly and season generously with salt. Leave out to dry for 4 hours or overnight in the fridge without covering.

Once ready to cook, coat skin with oil.

In an air fryer lay lemongrass on the base and lay pork belly over.

Air fry for 1 hour at 160°C, turn up heat to max and air fry for another 20-30 minutes, until the skin is nice and crispy.

Mix all ingredients until dipping sauce and serve with crispy pork belly.
