6 Real Curry Recipes To Try This Rainy Season

Singaporean Curry Chicken has taken one of the first viral headlines of 2022, and not for a good reason. But truth be told, it’s winter in New York, and who doesn’t love a good bowl of piping hot curry on a cold day? Same can be said for us when it rains here in Singapore. 

 

So grab your rice bowl or dipping baguette — whether you’re looking for a beginner’s curry recipe, or want to up your curry game with creative recipes, here are 6 real curry recipes that will expand your repertoire in no time: 

 

1. Curry Chicken 

 

Of course, to start us off we have a no-frills, reliable curry chicken recipe that is super shiok, especially on cold days. It’s hard to tell whether the star of the show is the tender chicken meat, the soft potatoes or the spicy chilli base, but what’s for sure is that you’ll be asking for seconds. For the best results, soak the chicken and potatoes in the curry for at least an hour for all the flavours to really mesh into that nostalgic combination we love.

2. Kari Kapitan (Nonya Chicken Curry)

 

Have you tried this Nonya curry before? With a distinct dry consistency and rich dark orange gravy, this takes the “curry game” to the next level and pairs perfectly with a bowl of steamed jasmine rice. Our recipe uses succulent chicken thighs to absorb all that aromatic flavour and make each bite so satisfying. 

 

If you want to make it a little less sinful, we recommend using Greek yoghurt instead of coconut milk. You only need 200 grams for it to work its magic, bringing out the same flavours with less guilt.

3. Japanese Curry Bun 

 

Thinking out of the box, we have an interesting Japanese Curry Bun recipe here known as Kar? Pan in Japan. It’s a small bun that’s super crispy on the outside, with a delicious curry filling inside made with chicken, vegetables and an easy premade Japanese curry sauce mix. In terms of texture, it’s much chewier than the local curry puffs, with a sweet-savoury flavour that will have you looking for seconds.

 

It’s good for breakfast or a little midday pick-me-up to remind you of Japan and help you get through your day.

4. Chicken Curry Noodles 

 

Chicken curry noodles is one of those dishes that is super easy to put together and so satisfying to slurp. For the curry itself, simply blending the dry ingredients already gets you halfway there, followed by a pan fry, adding chicken stock and topping off with coconut milk. 

 

Needless to say, the combination of intense gravy and fresh yellow noodles is truly a match made in heaven, but perhaps the best part is tau pok that soaks up all the sweetness, spiciness and creaminess for a powerful flavour explosion.

5. Curry Fish Head

 

The fastest curry dish on this list, the curry fish head dish is a popular choice at hawker centres or Zi Char stalls all around Singapore. The key is to prevent overcooking the fish head by steaming it separately for up to 8 minutes, and then serving with the spicy curry. For this recipe, we used an assam paste as the curry base to save time and get that signature fishhead curry flavour we all know and love.

6. Seafood Green Curry

 

For those who like more sweetness in their curry, this seafood green curry is a great recipe to try. The blend of coriander, lemongrass, lime zest, chilli paste and green chilli padis packs an aromatic punch and complements the seafood ingredients with a fresh, tangy and spicy flavour. Add in green eggplants and thai basil leaves to complete this curry dish that tastes as good as it looks.
