Stir Fry Basil Chicken

Pad Krapow Gai aka Stirred Fried Basil Thai Chicken is the signature Thai dish!

This fast and easy recipe just requires prepping the ingredients, giving them a quick stir fry and you are done!

Love the balance between the heat from the chili padi and the sharp contrast of the sweet soy sauce.

For those who love extra heat, just double the amount of chilli padi!

Ingredients

  1. 4 cloves garlic (chopped)

  2. 3 shallots

  3. 4 chilli padi

  4. 2 tbsp veg oil

  5. 200 g of minced chicken thigh

  6. 1½ tbsp fish sauce

  7. 1 tbsp sweet soy sauce

  8. dash of white pepper

  9. 1 tsp sugar

  10. 20 g Sweet Basil leaves

  16. 1½ tbsp fish sauce

  17. 1 tbsp sweet soy sauce

  20. 20 g Sweet Basil leaves

Instructions

  1. Chop 4 cloves garlic and 3 shallots

  2. Chop and grind 4 chili padis

  3. Cut up 20 g Sweet Basil leaves

  4. Add 2 tbsp veg oil to wok

  5. Add garlic and shallots and fry till fragrant

  6. add 200 g minced chicken thigh, break it up and stir fry

  7. Add chili padi, 1½ tbsp fish sauce, 1 tbsp sweet soy sauce and mix well

  8. Add 1 tsp sugar and dash of white pepper

  9. Toss in sweet basil leaves, cook for another 15 secs and serve
