Every Lunar New Year, Grace’s family huddles around the table to make cookies. 

You can shape them with a cookie cutter, or simply cut them into squares which will save you loads of time. 

No mixer required, and you can decorate them however you like (makes for good friendly competition or bonding with family)! 

 

Notes:

  • For the best flavour, toast your almonds before blending them into a fine powder.
  • Brushing the cookies with vanilla-scented egg wash adds a delightful fragrance, but skipping it makes them vegan-friendly.
  • Don’t skip the pinch of salt – it’s what gives these cookies their signature edge.

Mix all ingredients well till the dough does not stick to your hands, and is malleable like play dough. (Using your hand is best, add oil or butter if too dry)
