Salted Egg Yolk Butter Pork Ribs – 牛油黃金排骨

The salted egg yolk craze is far from over. This method of preserving eggs by curing them in brine is believed to have originated from China.

What you get when you combine mashed salted egg yolks with butter?

The answer – a rich, creamy and aromatic sauce (Throw in some curry leaves for the aroma and chili padis for the heat).

Toss some crispy pork ribs into this and you’ve got the perfect dinner dish! This beautiful sauce works with almost anything!

Ingredients

  1. 600 g pork ribs

  2. 4 salted egg yolks

  3. 30 curry leaves

  4. 2-3 chili padis (chopped)

  5. 2 tbsp oil

  6. 1 tbsp minced garlic

  7. 1 tbsp minced ginger

  8. 40 g salted butter

  9. 1 tbsp sugar

  10. ½ cup evaporated milk

  11. Oil for deep fry

  12. Marinade

  13. 1 tsp salt

  14. 1 tsp sugar

  15. 2 tbsp oyster sauce

  16. 1 tbsp sesame oil

  17. ½ tsp sodium bicarbonate

  18. 1 egg

  19. 2 tbsp corn flour

  20. 2 tbsp rice flour

Instructions

  1. Cut 600 g pork ribs into individual ribs

  2. Tenderise ribs with meat mallet

  3. Marinate ribs with 1 tsp salt, 1 tsp sugar, 2 tbsp oyster sauce, 1 tbsp sesame oil, ½ tsp sodium bicarbonate, 1 egg, 2 tbsp corn flour and 2 tbsp rice flour

  4. Mix well and let it marinate for at least 30 mins

  5. Steam 4 salted egg yolks for 10 mins

  6. Prepare 30 curry leaves

  7. Chop 2-3 chili padis

  8. Remove salted egg yolks from steamer

  9. Mash salted egg yolks with a fork as finely as possible

  10. Heat enough oil in wok, deep fry pork ribs until golden brown

  11. Drain and set aside

  12. Heat 2 tbsp oil in wok

  13. Add 1 tbsp minced garlic, 1 tbsp minced ginger, Chopped chili padi and curry leaves

  14. Stir fry until fragrant

  15. Add 40g salted butter

  16. Let butter melt

  17. Add mashed salted egg yolks

  18. Stir fry until foamy

  19. Add 1 tbsp sugar

  20. Add ½ cup evaporated milk

  21. Mix well and add pork ribs

  22. Toss pork ribs in sauce and serve
