Taiwanese Salt & Pepper Chicken – 盐酥鸡

Ingredients

  1. 400 g chicken thigh

  2. 1 stalk spring onions

  3. 3 cloves garlic

  4. 1 tbsp grated ginger

  5. 1 tsp salt

  6. 1 tsp sugar

  7. 2 tbsp water

  8. 1 tbsp rice wine

  9. ½ tsp baking soda

  10. 1 tsp chicken powder

  11. 1 tbsp light soy sauce

  12. ½ tsp pepper salt

  13. 30 g fresh basil leaves

  14. 200 g corn starch

  15. 1 tbsp pepper salt

Instructions

  1. Cut 400 g thigh into cubes

  2. In a bowl, add the chicken and 1 stalk spring onions (chopped), 3 cloves garlic (grated), 1 tbsp grated ginger, 1 tsp salt, 1 tsp sugar, 2 tbsp water, 1 tbsp rice wine, ½ tsp baking soda, 1 tsp chicken powder, 1 tbsp light soy sauce, and ½ tsp pepper salt

  3. Mix well and marinate for 30 mins

  4. To a bowl, sift 200 g corn starch and add 1 tbsp pepper salt and mix well

  5. Coat the chicken chunks evenly in the mix

  6. Deep fry chicken till golden brown

  7. Deep fry basil leaves for 15 secs
