Water Chestnut and Sugar Cane Cake
Chinese New Year is a time of feasting, lots of eating and glorious food, so sometimes it might be good to serve something cooling (yet tasty) to go with the festivities!
All you need is about an hour, and you’ll have a nice cooling treat for your visitors at home. We used Nutriwell Water Chestnut and Sugar Cane drink, which is also lesser in sugar for health benefits. Also added are water chestnuts, so that you get that crunch that gives it more depth.

1000ml Nutriwell Water Chestnut and Sugar Cane drink | |
165g water chestnut flour | |
10fresh water chestnuts |
Directions
1.
Peel water chestnuts and chop into small pieces
Mark as complete

Place water chestnuts pieces and 500ml of Nutriwell Water Chestnut and Sugar Cane drink in a pot and bring to a boil for 2 minutes.
Mark as complete

Meanwhile, combine water chestnut flour with 500ml of Nutriwell Water Chestnut and Sugar Cane drink in a bowl and stir until smooth

Add chestnut flour mixture to the pot and keep stirring over low heat until mixture thickens.
Mark as complete

Immediately pour thickened mixture into a greased tray and steam for 40 minutes, until the water chestnut cake is clear.

Remove from steamer and cool.

Cut into slices and pan fry before serving.
