Stir Fried Sea Cucumber with Pork Belly and Leeks – 猪肉韭菜炒海参

It’s quite known to most of us that many sea cucumber recipes are braising recipes, so in this video but we opted for a slightly different challenge, to *stir fry* today’s sea cucumber with a lovely pairing of pork belly and leeks! The thickened mixture of sauces in the pan pairs well with the combination of ingredients, leading to a tasty dish that goes great with a piping bowl of rice.

We used the Isles of Eden’s Providence Easy Prep Pack, which has been hydrated, which is great for the modern household (no need to spend the time hydrating yay!).   1. 1 tbsp cooking oil

  2. 300g Pork Belly (cut into medium pieces)

  3. 200g Chinese leeks (cut diagonally)

  4. 275g Isles of Eden Sea Cucumbers (cut into bite sizes)

  5. 1 tbsp Minced garlic

  6. ½ tbsp oyster sauce

  7. ½ tbsp light soy sauce

  8. ½ tbsp fish sauce

  9. ½ tbsp dark soy sauce (more if you prefer your dish in deeper color)

  10. 3 tbsp rice wine

  11. Isles of Eden Superior braised sauce (optional)

  12. Garnish with coriander


  1. Sear pork belly on a pan until all sides are brown, dish up and set aside reserving the pork fats in the pan.

  2. Add in minced garlic and stir fry until fragrant, add in Isles of Eden sea cucumbers and continue to stir fry.

  3. Add in pork belly, mix well.

  4. Add in Chinese leek and continue to mix well.

  5. Add in soy sauce, dark soya sauce, fish sauce, oyster sauce & Isles of Eden Sea Cucumbers. Stir fry until well combined.

  6. Lastly add in rice wine, gentle stir till sauce thickens.

  7. Dish up and serve hot.
