Stir-fried Leeks with Prawns
A super simple dish that can be done in no time at all, ready for a family dinner! This recipe has less than 5 key ingredients and combines the sweetness of prawns well with the flavor from the leeks. The shao xing wine also adds another layer of depth to the taste, which can certainly be enjoyed by everyone in the family.
We used the Dark Ruby Wok from Tefal for this dish, for it’s high-density coating reinforced mineral, created for everyday wear and tear that comes from cooking.

5 Leeks | |
6dried mushrooms (soaked) | |
8prawns (deveined) | |
3cloves garlic (minced) | |
1tsp oyster sauce | |
1tsp shao xing wine | |
1tbsp oil | |
¼cup water or soaking liquid from mushrooms | |
Salt to taste |
Directions
1.
Wash the leeks. Cut and dispose the tops and ends. Slice diagonally, separating white ends from green tops.

Remove stalks from softened mushrooms and slice.

Add some oil to the wok. When hot, stir-fry the prawns till about 70% cooked. Remove from wok and set aside.

Heat some oil in the same wok and fry the minced garlic till fragrant. Add sliced mushrooms and leeks.

Add 1 tsp oyster sauce and mix well

When they have softened, add in water and let it come to a boil.

Add prawns with 1 tsp shao xing wine. Mix well, taste and season accordingly.
