Steamed Egg Custard With Minced Meat
A delicious homely dish. This is a really simple recipe that just takes up to 15 minutes, yes FIFTEEN minutes. We would recommend to choose some mince meat with at least 30% fat. The chopped up salted egg yolks add a layer of depth to the taste profile.
Garnish it with spring onions and you’ll have a wholesome side to a meal, perfect to go with steaming hot rice!

200g minced meat | |
1salted egg | |
3 eggs | |
250ml water | |
½tbsp light soya sauce | |
1stalk spring onion (chopped) |
Meat marinade:
¼tsp salt | |
¼tsp pepper | |
1tsp Shaoxing wine | |
½tsp cornflour |
Directions
1.
Choose mince meat with at least 30% fat.

Marinate 200g minced meat with ¼ tsp salt, ¼ tsp pepper, 1 tsp Shaoxing wine and ½ tsp cornflour in a steaming plate for 15 minutes.

Separate salted egg yolk from the white.Cut salted egg yolk into eight.

In a mixing bowl, whisk 3 eggs, 250ml water, salted egg white and ½ tbsp light soya sauce.

Add the marinated minced meat into the egg mixture.. Stir to combine.

Steam on high heat for 5 minutes.

Uncover the steamer and arrange salted egg yolk on top of the minced meat.

Lower heat and steam for a further 8 minutes, or until it's cooked.
