Semur Ayam
A very simple home cooked dish to make yet tastes so flavourful. Semur Ayam is a stewed chicken dish that is sweet and savoury, mainly from the kecap manis. Together with fragrance from lemongrass, kaffir lime leaves and bay leaves creates a flavourful saucy stew that we all would die to come home to.

4candle nuts | |
3garlic cloves | |
7 shallots | |
½tsp coriander powder | |
7grams of ginger | |
12chicken mid wings | |
4tbsp kecap manis | |
1stalk of lemongrass | |
3bay leaves | |
2kaffir lime leaves | |
1tbsp salt | |
1tbsp white pepper | |
4tbsp of cooking oil |
Directions
1.
Blend ingredients for paste in a blender.

Heat 4 tbsp of cooking oil in a pan at medium high heat.
Mark as complete

Add in paste and stir fry until fragrant.

Add lemon grass, bay leaves and lime leaves, stir fry and add kecap manis.
Mark as complete

Add in chicken and turn on to high heat. Brown chicken skin side down.

Add salt, pepper and 150ml of warm water.
Mark as complete
7.
Cover and turn heat down to medium. Simmer for 20 minutes until liquid is halved.

Plate and serve.
