Sambal Fried Rice

Our perfect Sambal belacan recipe completely ELEVATES the flavours of rice. Topped with a sunny side up, with crispy egg white and an oozy yolk…yummms!! For that extra spicy kick, serve some sambal belacan on the side!
We used Heavenly Rice’s Heavenly Brown Rice for the making of this dish. It’s enriched with more calcium, iron, protein, fibre, and B vitamins for nutritional values, so while the sambal fried rice packs a flavor bomb, it’s still good nutrition compared to using regular rice.

Ingredients

Adjust Servings
2cups Heavenly brown rice
cups water
3shallots (minced)
4cloves garlic (minced)
200g chicken breast (diced)
¼tsp pepper
¼tsp salt
2tbsp kecap manis
4tbsp sambal belacan
3long beans (diced)
3tbsp oil
Salt and pepper to taste
Garnish:
4eggs (sunny side-up)
Crispy fried ikan bilis
Crispy fried shallots
Cucumber slices
Sambal belacan

Directions

1.

Cook 2 cups of Heavenly brown rice with 3½ cups water in rice cooker. Once cooled, refrigerate overnight.
Mark as complete

Heat 3 tbsp oil in the wok.
Mark as complete

Add in minced shallots and garlic.
Mark as complete
4.

Fried till fragrant.
Mark as complete
5.

Add in 4 tbsp sambal belacan.
Mark as complete
6.

Fry for a while till fragrant.
Mark as complete
7.

Add in 200g diced chicken breast and stir fry till cooked.
Mark as complete
8.

Add in diced long beans and fry for 1 minute.
Mark as complete
9.

Add the cooked Heavenly Brown Rice, stir till well combined.
Mark as complete
10.

Season with 2 tbsp kecap manis, salt and pepper to taste
Mark as complete
11.

Stir fry 2 more minutes till rice is fragrant and seasoning are mixed through.
Mark as complete
12.

Serve with crispy sunny side up egg, fried shallots, fried ikan bilis and slices of cucumbers.
Mark as complete
