Sambal Eggplant with Minced Beef

We normally call it EGGPLANT, but aubergine and brinjal are also common ways to call this awesome vegetable. Super simple and really tasty, many of us growing up would have had this dish one way or another.

Simply cut the eggplant into batons, deep fry them, and prepare the minced beef sauce. This can be done under 30 minutes; one recipe for the working individual looking to whip up a quick meal. Perfect with a piping hot bowl of rice!

  1. 300g minced beef

  2. 230g (1 bottle) chilli sauce with ginger and garlic

  3. 500g eggplants

  4. Fish sauce to taste

  5. Dash of white pepper

  6. 2 tbsp oil

  7. Oil for deep frying

  8. Chopped 3 stalks Spring Onions


  1. Cut 500g eggplants into quarters. then into 5 cm batons.

  2. Deep-fry eggplants in oil until golden brown. Drain and set aside.

  3. Heat 2 tbsp oil in a pan, stir fry minced beef in oil until fragrant.

  4. Add chilli sauce and stir fry for another 1 minute.

  5. Add fried eggplants and season to taste with fish sauce and white pepper. Simmer for 2-3 minutes and add chopped spring onions.

  6. Serve with steamed white rice.
