Salted Egg Yolk Butter Pork Ribs

The salted egg yolk craze is far from over. This method of preserving eggs by curing them in brine is believed to have originated from China.
What you get when you combine mashed salted egg yolks with butter?
The answer – a rich, creamy and aromatic sauce (Throw in some curry leaves for the aroma and chili padis for the heat).
Toss some crispy pork ribs into this and you’ve got the perfect dinner dish! This beautiful sauce works with almost anything!

Ingredients

Adjust Servings
600g pork ribs
4salted egg yolks
30curry leaves
2-3chili padis (chopped)
2tbsp oil
1tbsp minced garlic
1tbsp minced ginger
40g salted butter
1tbsp sugar
½cup evaporated milk
Oil for deep fry
Marinade:
1tsp salt
1tsp sugar
2tbsp oyster sauce
1tbsp sesame oil
½tsp sodium bicarbonate
1 egg
2tbsp corn flour
2tbsp rice flour

Directions

1.

Cut 600 g pork ribs into individual ribs

Tenderise ribs with meat mallet

Marinate ribs with 1 tsp salt,

1 tsp sugar,

2 tbsp oyster sauce,
Mark as complete

1 tbsp sesame oil,

½ tsp sodium bicarbonate,

1 egg,

2 tbsp corn flour,

and 2 tbsp rice flour

Mix well and let it marinate for at least 30 mins

Steam 4 salted egg yolks for 10 mins

Prepare 30 curry leaves

Chop 2-3 chili padis

Remove salted egg yolks from steamer

Mash salted egg yolks with a fork as finely as possible

Heat enough oil in wok, deep fry pork ribs until golden brown
