Marinate 500g minced beef with 2 tbsp light soya sauce, 1 tsp dark soya sauce, 1 tbsp Shaoxing wine, 1 tsp sesame oil, 2 tbsp oyster sauce, 2 tsp cornstarch and ⅛ tsp pepper for 30 minutes.
