Prawns with Pumpkin Purée and Fried Broccoli
This marks the last dish for the 1 week daily upload marathon for Chinese New Year! Pan-seared Prawns paired with a creamy and delicious Pumpkin Purée, finished with Air Fried Brocollis! Not only does this dish looks amazing visually, the 3 main ingredients definitely creates a harmonic symphony in your mouth. Also, this dish was made with the auspicious saying in mind “遍地黄金, 黄金满地” which signifies that there will be gold on the ground wherever you walk.

12large prawns (peeled and deveined) | |
½tsp salt | |
½tsp white pepper powder | |
1tsp cornstarch | |
4tbsp cooking oil | |
3cloves minced garlic | |
1medium onion (chopped into squares) | |
300g Pumpkin (cut into cubes) | |
Salt and sugar | |
½cup chicken stock | |
½tsp 5 spice powder |
Directions
1.
Add 2 tbsp of oil into a pan over medium heat, Add in minced garlic and chopped onions. Stir fry until fragrant.

Add in pumpkin, season with salt, sugar and 5 spice powder. Continue to stir fry.

Add in chicken stock and cover and let it simmer for 8- 10 minutes until the pumpkin is soft.

Transfer mixture into a blender. Blend until smooth.

Cut broccoli into individual flowers and season with sea salt.

Add into an air fryer and cook at 180°C for around 8 minutes until crispy.

Remove and set aside.

Season prawns with salt, pepper and corn starch. Leave to marinate for 15 minutes.

In a hot pan, add 2 tbsp of cooking oil, add prawns and pan fry until lightly browned and cooked.

In a large wide plate, pour pumpkin puree onto the plate filling the whole plate. Add prawns on the center of the dish and fried broccoli at the sides.
