Pineapple Fried Rice With Chicken Floss – 凤梨炒饭

A fried rice dish bursting with flavours, the tangy sweet pineapple works so well with fish sauce, prawns and chicken. The cashew nut gives it a crunch and nutty flavour. The chicken meat floss binds the flavours together. It is one fried rice that instantly makes our mouth salivate and craving for more.

  1. 1 pineapple

  2. 500g cooked rice

  3. 150g prawns (shelled and deveined)

  4. 150g chicken breast (diced)

  5. ½ small onion (diced)

  6. 2 eggs

  7. 80g roasted cashews

  8. 20g chicken meat floss

  9. 1 tsp turmeric powder

  10. 3 tbsp fish sauce

  11. 100g sliced pineapple

  12. 3 tbsp pineapple juice

  13. ¼ tsp pepper

  14. 3 tbsp oil

  15. 1 red chilli (sliced)

  16. Coriander to garnish


  1. Halve the pineapple. Core the pineapple and slice the flesh. Reserve 100g of sliced pineapple and 3 tbsp of crushed pineapple with juice.

  2. Heat 3 tbsp oil and scramble 2 eggs.

  3. Once cooked, add in the diced onion and stir fry for 1 minute.

  4. Add in 150g diced chicken breast, When it is ¾ cooked, add in 150g prawns.

  5. When the prawns are almost cooked, add in 500g of cooked rice.

  6. Season it with 1 tsp turmeric powder, 3 tbsp fish sauce, ⅛ tsp pepper and 3 tbsp of crush pineapple with juice.

  7. Add in 80g roasted cashew and 100g sliced pineapple.

  8. Stir-fry evenly till fragrant.

  9. Season with additional fish sauce if needed.

  10. Dish on cored pineapple. Add chicken meat floss over it.

  11. Garnish with sliced red chillies and coriander leaves.
