Pineapple Fried Rice With Chicken Floss
A fried rice dish bursting with flavours, the tangy sweet pineapple works so well with fish sauce, prawns and chicken. The cashew nut gives it a crunch and nutty flavour. The chicken meat floss binds the flavours together. It is one fried rice that instantly makes our mouth salivate and craving for more.

1 pineapple | |
500g cooked rice | |
150g prawns (shelled and deveined) | |
150g chicken breast (diced) | |
½small onion (diced) | |
2 eggs | |
80g roasted cashews | |
20g chicken meat floss | |
1tsp turmeric powder | |
3tbsp fish sauce | |
100g sliced pineapple | |
3tbsp pineapple juice | |
¼tsp pepper | |
3tbsp oil | |
1red chilli (sliced) | |
Coriander to garnish |
Directions
1.
Halve the pineapple. Core the pineapple and slice the flesh. Reserve 100g of sliced pineapple and 3 tbsp of crushed pineapple with juice.

Heat 3 tbsp oil and scramble 2 eggs.

Once cooked, add in the diced onion and stir fry for 1 minute.

Add in 150g diced chicken breast, When it is ¾ cooked, add in 150g prawns.

When the prawns are almost cooked, add in 500g of cooked rice.

Season it with 1 tsp turmeric powder, 3 tbsp fish sauce, ⅛ tsp pepper and 3 tbsp of crush pineapple with juice.

Add in 80g roasted cashew and 100g sliced pineapple.

Stir-fry evenly till fragrant.

Season with additional fish sauce if needed.

Dish on cored pineapple. Add chicken meat floss over it.

Garnish with sliced red chillies and coriander leaves.
