Mee Rebus

Mee Rebus is a popular hawker dish amongst many of us in both Malaysia and Singapore. What makes this unique dish is the combination of yellow noodles with it’s thick and spicy gravy. While we all know how tasty this gravy is, what’s surprising is that the consistency of the sauce comes from mashed sweet potatoes, awesome right?
To complete this awesome recipe, we will garnish this dish with an egg, spring onions, tau kwa, and so many more that make this asian dish so yummy. At the end of the day, this is really simple, yet the end result so satisfying to the home-chef in every of us.

Add 8 red chillies, 12 shallots, 8 cloves garlic, 6 candle nuts, 20g tumeric, 20g galangal, 50g dried shrimp (soaked) and 200ml chicken stock to blend into a smooth paste

Add 100ml oil to pot, then add the chili paste and stir fry till fragrant

Add 2 tbsp meat curry powder, 4 tbsp tau cheo, and 800ml of chicken stock

Stir in 4 cups mashed sweet potatoes and 1 cup ground roasted peanuts

Add 2 tbsp sugar and 1 tsp salt to taste

Simmer for 30 mins

Blanch 200g yellow noodles with 40g bean sprouts
