Mango Pomelo Sago
Most people should have heard of this classic Hong Kong dessert. Rich flavours from mangos form the base of this dessert. That combined with the citrusy notes from pomelos makes it surprisingly refreshing.
The addition of sago and evaporated milk gives it a really smooth and creamy texture.

4ripe Thai Mangoes | |
150g sago pearls | |
300g pomelo | |
250ml fresh milk | |
200ml evaporated milk | |
100g caster sugar |
Directions
1.
Bring a pot of water to boil. When it comes to a roiling boil, carefully tip in the sago pearls.

Give it a stir, cook until sago pearls are translucent.

Drain and place it in a bowl of water. Set aside.

Peel mangoes. Cut the flesh from the seed. Cover set aside the flesh of one mango in the fridge.

Carefully break apart the pomelo. Place in the fridge.

In a blender, put the flesh of 3 mangoes, 100g caster sugar, 250ml fresh milk, 200ml evaporated milk and blend until smooth.

Taste for sweetness, add more sugar if it’s not, more milk if it is.

Chill in the refrigerator for 1 hour or longer.

Serve in individual cups/bowls. Garnish generously with sage, mango cubes and pomelo.
