Lobster Roll

When it comes to looking lobsters, the live ones make a world of difference! We chose to create our own lobster roll this time. It’s a super simple recipe that brings out the sweetness of your key ingredient, the lobster.
There’s nothing worse than to overcook the lobsters. By dipping the lobsters in iced water to stop it from overcooking, the tenderness of the meat is retained. And instead of slathering mayonnaise all over, we used MARIGOLD Low Fat Yogurt as the base of the sauce. The mixture of yogurt, lemon juice and dill give it a refreshing taste.
Paring toasted butter rolls and a touch of black pepper, this makes the perfect brunch item!

Ingredients

Adjust Servings
2fresh lobster
1tbsp salt
Pot of water
3tbsp MARIGOLD Low Fat Yoghurt
20g chopped chives
20g chopped celery leaves
5g fresh dill
Salt & black pepper to taste
Juice from ½ a lemon
4hotdog buns
20g melted butter
Lemon slices
Mix Carol lettuces

Directions

1.

Add 1 tbsp salt to pot of water and bring to boil
Mark as complete
2.

Cook 2 fresh lobster in for 12-18 mins depending on size
Mark as complete
3.

Dip cooked lobster in ice water to stop it from cooking
Mark as complete
4.

Remove lobster meat from shells to a large mixing bowl
Mark as complete
5.

Add 3 tbsp MARIGOLD Low Fat Yoghurt
Mark as complete
6.

Add 20g chopped chives, 20g chopped celery leaves and 5g fresh dill
Mark as complete
7.

Season with salt & black pepper to taste
Mark as complete
8.

Add Juice from ½ a lemon and mix well
Mark as complete
9.

Spread hotdog buns with melted butter
Mark as complete
10.

Toast on grill pan.
Mark as complete
11.

Add lobster mixture to toasted buns
Mark as complete
12.

Serve with lemon slices and mixed carol lettuces
Mark as complete
