Grilled Beef Salad with Mango Archar

Today’s recipe will be a good balance of meat, salad, and tangy goodness!

To make mango achar, we chose green mangoes and cut them with skin still on, after which we mix them with condiments. We then heat up a mixture and pour it over the mango, before setting aside.

Use your preferred cut of steak (ribeye/sirloin) for the meat, season with salt and pepper, and grill them on your Weber grill (we used the Weber Q 2200) over a direct head for 2 minutes on each side. Remember to let it rest before cutting it into slices. Last but not least, we brush honey + butter over pineapples and grill them on our Weber before grilling them.

With everything laid out nicely on a large plate, it’s a perfect meaty appetizer for a family feast!

Ingredients:

  1. 400g ribeye/sirloin steak (2 x 200g each steak)

  2. Salt and pepper to taste

  3. 100g arugula (rocket)

  4. 1 pineapple (peeled and cut into quarters)

  5. 2 tbsp melted butter

  6. 2 tbsp honey

  7. Handful of roasted peanuts

  8. Ingredients

    Mango Achar:

    1. 3 green unripe mangoes

    2. 1 tsp turmeric powder

    3. 1 tsp chilli powder (adjust to taste)

    4. 2 tbsp apple cider vinegar

    5. 1 tbsp brown sugar

    6. Salt to taste

    7. 4 tbsp sunflower oil

    8. 1 tsp mustard seeds

    9. 1 tsp fennel seeds

    10. 1 tsp fenugreek seeds

    11. 1 tsp coriander seeds

    Steps:

    1. Cut green mangoes into cubes with skin on.

    2. In a mixing bowl add green mango cubes, chilli powder, turmeric powder, apple cider vinegar, brown sugar and salt to taste. Mix well.

    3. In a small pan heat sunflower oil then add mustard seeds, fennel seeds, fenugreek seeds and coriander seeds. Once they start to crackle turn off the heat.

    4. Pour the hot oil mixture over the mango mixture, mix well and set aside.

    5. Preheat weber grill to 200°C.

    6. Season steaks with salt and pepper, grill steaks on weber grill over direct heat for 2 minutes each side or to your preference.

    7. Once done remove steaks from grill and rest for 3 minutes before cutting into slices.

    8. Mix honey with butter and bush over pineapples. Grill pineapples for 1-2 minutes on each side on the weber grill. Cut grilled pineapples into smaller chunks

    9. Lay arugula with pineapple chunks on a large plate. Add grilled steaks and top with mango archar. Sprinkle roasted peanuts on top and serve.
