Five Spice Duck Breast with Apple Cranberry Juice Sauce

A simple and lovely recipe that looks really good, this dish is very suitable as a main on a special date for an evening for two.
Duck breast is a flavourful meat, and to best balance the gamey taste we seasoned it with five spice powder. We’ll have to add that frying the skin to a crispy golden brown finish while basting the duck breast with its fats keeping the meat moist.
Combining MARIGOLD 100% Apple Cranberry Juice, honey, fresh pomegranate seeds for the sauce, there’s a balance of acidity with a touch of sweetness, and by finishing it will some butter we end up having that velvety finish.
The most amazing thing about this recipe is, all these can be done within half an hour!

Adjust Servings
2duck breast
1tbsp five spice powder
½tsp salt
½tsp black pepper
1 pomegranate
100g wild rocket
1250ml pack MARIGOLD 100% Apple Cranberry Juice
2tbsp honey
2tbsp pomegranate seeds
30g butter



Score the skin side of two duck breasts
Mark as complete

Season duck breasts 1 tbsp five spice, salt and black pepper
Mark as complete

flip duck breasts and continue to baste with duck fats on the pan, until it's cooked
Mark as complete

Side the duck breasts to rest for 10 mins
Mark as complete

Pour the duck oil away from pan, deglaze pan with 250ml MARIGOLD 100% Apple Cranberry Juice
Mark as complete

Add 2 tbsp honey and cook until sauce is reduced
Mark as complete

Add 2 tbsp pomegranate seeds
Mark as complete

Turn of heat and add 30g butter
Mark as complete

Swirl and melt butter until sauce become velvety
Mark as complete

Add wild rockets to plate with 2 tbsp pomegranate seeds
Mark as complete

Slice duck breast and add to salad
Mark as complete

Drizzle sauce over duck and salad
